Description
Essential oil encapsulated or spray dried is a powder form of essential oil liquid. During the spray-drying process, essential oil liquids are mixed or emulsified with carriers and emulsifiers (e.g. maltodextrin, gum acacia, modified starch) and fed into the nozzle where it's sprayed under high pressure and instantly evaporates the liquid into a solid behind. It's best to use essential oil encapsulated in seasoning and condiments that have direct contact with hot water or hot oil. Because it makes a more rapid-release flavor. Most of the essential oil encapsulated has lower volatile content than their liquid form. The character of essential oil encapsulated:
1. Stable in powders and less likely to oxidize or degrade when stored
2. Water-soluble and easily dissolve in water-based seasoning and condiment products.
3. Easily blended with other dry ingredients.
